Kimchi Grilled Cheese

Kimchi Grilled Cheese




  • 2 slices sourdough bread
  • 4 slices of Swiss cheese
  • 3/4 cup shredded cheddar and fontina
  • 1 tbl of butter or mayo to spread on outside of bread
  • 2 tbl butter for the skillet or grill pan
  • 1/4 cup strained kimchi




  • Preheat oven to 375
  • On a sheet pan lay sourdough bread and cover each slice with cheese
  • Bake in oven for 5-7 minutes or until cheese is melted
  • Heat a skillet or grill pan and melt butter
  • Lay drained kimchi to one side of sandwich and close. Spread butter or mayo to outside of bread and cook in warm skillet until golden brown. Use a weight or panini press to weigh down sandwich while cooking.
